Yummy Cilantro Lime Chicken Quesadillas

Just reading the title of this post should make your mouth water. This was a delicious and super easy recipe...that I actually just made tonight! Tuesday's are my busiest day of the week, so I'm always on the hunt for easy recipes that won't take up my entire evening. I will say that John was not a fan, but the hubs liked it. Daniel had mentioned that he was in the mood for quesadillas so I found this recipe and tweaked it a bit to fit our needs. Basically I just added a can of corn since John loves corn and instead of making tacos I poured the chicken mixture into burrito shells and grilled them on the skillet. Another easy meal to add to my Tuesday rotation!

Cilantro Lime Chicken Quesadillas

INGREDIENTS
1 jar of salsa
1 can of corn
4 chicken breasts, cut into bite sized pieces
a few sliced mushrooms
a handful of fresh chopped cilantro
1 lime, sliced in wedges
1 taco seasoning packet
Soft taco shells

DIRECTIONS:
In one skillet, sautee the mushrooms with a bit of butter. Add the salsa, corn, and cilantro. Squeeze the lime juice into the mixture.Turn heat to low. In a second skillet, cook the chicken until done all the way through, then add the taco seasoning packet. FYI, I never use the entire packet, just maybe like half. Once the chicken is finished cooking, add it to the salsa mixture. Use the now empty skillet to cook your quesadillas.

Ok. So yes this actually looks kind of nasty, but when you add this to the quesadilla....delish!

  1. I made an awesome white turkey chili.. if you want the recipe. Its spicy with chili's and cilantro too..I know Daniel would love it.
